I bought this cookbook because I was intrigued by how honest the food is presented, both in procedure and in recipe. That it pertains exclusively to roasting, grilling, and braising made it seem all the more special. The photos were gorgeous and I would buy every plate featured in this book if my apartment wasn't currently filled to the brim with cookbooks.

All of this in lesser hands might be a cheap act of hero worship, instead we have a near perfect 21st Century pop record and the soundtrack of my stormy Sunday in Wales.
Chef Smillie's recipe for grilled squid and fennel. I am a sucker for anything to do with squid and his usage of fennel prepared "alla Grecque" reminds me of how wonderful French countryside cooking can be. The addition of Calabrian chiles is very cool.
I love this cookbook and refer to it constantly. Chef Smillie has clearly mastered the usage of fire in his cooking. Slow Fires features recipes for many types of ingredients and proteins. They are both unpretentious and beautiful, utilizing strong flavors and not afraid to show char. The book itself is great for any cook, novice or professional, who is interested in taking a more primal approach to cuisine. If you love your grill, this is for you.
