Voici le temps du travail en cuverie… Vue de l'opération de remontage et de pigeage, qui consiste à enfoncer les baies de raisins qui flottent (à cause du gaz carbonique dégagé par la fermentation) tout en les arrosant du jus du fond de la cuve.✨

Fun and educational night! Wines were quite reflective of respective vintages. *1996 - fruit thinning out with acid dominating. Still, elegant. Dry extract. Soft, velvet texture. Good choice to start things off.
*1998 - markedly bigger than 96. Fatter. More alcohol. Still quite tannic. Green vegetal aromas. Not so balanced. Least liked one. *2004 - green nose quite pronounced. Quite weightless though with nice mouthfeel. Balanced. Pure. Elegant. Faded badly (greener) when drunk again at the end though. *2000 - Barnyard thingy. Red fruits, soft. Rustic finish. Aromatic (some guessing Groffier may be involved?) *2001 - hmmm, harder. Black fruits. Tannic but fine. Feels over extracted perhaps. Bit menthol. Surprise for 2001, thought it'd be lighter. *2002 - so perfumed. Fresh. Vibrant. Elegant. Cool dark fruits. Light footed, finessed. Linear finish. Very fine. WOTN! *1999 - nose open and alluring. Mouth filling. Juicy. Good grip. Nutty with time. All good till the end with finish a bit rough and alcoholic. *2005 - deep ruby colour. Nose similar to 2002 with less finesse. Precise. Concentrated. Not ready yet, most potential. Long finish, black mouth staining fruits.
