Little falafel balls with lemony-garlicy tahini dressing 👌
I cup dried chickpeas*
*Put chickpeas in a bowl and cover with water. Leave overnight. Drain.
1 clove of garlic, chopped
1 spring onion, chopped
1/2 cup of parsley or coriander
2 teaspoons dried ground cumin
Sprinkle of chilli flakes
Squeeze of lemon juice
2 tablespoons flour
Place the chickpeas, garlic, spring onion, parsley into a food processor and whizz up until just blended. Add the remaining ingredients and pulse until just mixed. Don't over mix into a paste, you want some texture.
Roll mixture into small balls and refrigerate for a couple of hours.
Heat coconut oil in a frying pan.
Place falafel balls into pan and fry until golden.
1/3 cup Tahini
1 tablespoon olive oil
1 tablespoon lemon juice
Pinch of sea salt
1 clove garlic, finely chopped
In a bowl whisk together tahini, olive oil, and lemon juice.
Add tablespoons of warm water until dressing is the consistency you prefer. Add salt, pepper, and garlic.
Whisk until smooth.
Serve falafel on a bed of baby spinach and mesclun. Drizzle tahini dressing over the top.
A sprinkle of black sesame seeds and calendula petals is optional but pretty great 🙅
Lettuce Beet Salad
It's been a long time until I can't remember when I eat this beauty beet and I already forgot the taste as well so when I see it in market (ON SALE) okay,I take it😂
I make beet salad and beet juice..
So the taste is sweet,crunchy,little bit bitter and earthy (now I know what does it means with "earthy taste" like everyone said in internet😂) I prefer to make it into beet juice, just blend the raw beet and squeezed lemon juice, so fresh and easy😍
Roasted spiced #chickpeas are great for snacking. Drain two tins of chickpeas, blot as much moisture off them as you can, then pop into a bowl. Toss in two tablespoons of EVOO and whatever spice mix you have on hand. These got a fusion of Asian flavours with #cumin#corianderseeds#turmeric#currypowder and a little @gewurzhaus Asian Wok Spice. Roast at 200 degrees Celsius for 35-40 minutes, then turn off the oven and leave the door ajar. You want to really dry them out. #chickpeas#healthy#snacking#vegan

This recipe was modified a little from the original but my goodness, was this gooooooood! Made it for dinner last night and had some for lunch today. A little heavy for lunch but I’m not really worried about it!
- little bit of oil
- cumin (recipe calls for cumin seeds but I only had powder)
- little bit of salt
- ginger (recipe calls for fresh but, again, I only had powder)
- curry - a little bit of red pepper flakes
- sweet potatoes
- chickpeas - tomatoes (recipe called for a can of diced tomatoes but I just actually diced up tomatoes and threw it in)
- coconut milk (I only had regular ((so full fat)) rather than light like it called for)
- baby kale (rather than spinach)
- bean sprouts (didn’t want them to go bad so why not)
- rice (or quinoa or whatever you’d like)
Let the oil and cumin cook for a bit, then add in everything else and let it cook on medium for about 20 mins and you’re golden (😉), baby.
You guys need to try this one out, for sure!
Falafels for dinner! This is my second time making these delicious little discs. I’m not even kidding when I say how easy these are. Soaked chickpeas are tossed in the food processor with lots of parsley, cilantro, garlic and spices. Scoop into balls and shallow fry. Tonight I basically pretended I was on the show Chopped. My "basket" consisted of the small amount of almost rotten produce I had left after being trapped inside most of the week because of the ice. All of that green stuff is a mint spinach pesto. Delicious but super easy; just blended pine nuts, olive oil, spinach and mint. Not a lot of people can eat raw beef but you should definitely try this dish: it's seared on the outside but still a bit blue in the middle - it's perfect! The chickpeas also adds a great contrast in texture to the beef :)

Here I’m sharing with you this easy-peasy homemade hummus I made over the weekend 😋(Who is OBSESSED with hummus like I am?! 🙋🏻♀️) Literally all you need is 3 ingredients: cooked chickpeas, tahini and olive oil (you can even omit tahini- it still tastes heavenly without) I dont ever measure at all, but I’d say proportions should be 4:1:1 respectively. Add salt, garlic powder, paprika and cumin to taste then puree errythang together. Never buy store-bought hummus again!! This easy recipe is so so healthy, free from preservatives and can last a week in the fridge.
