Sugar-Free #Carrot Cake Part 1/2
Bran-rich self-raising flour may be substituted for half wholewheat flour, half self-raising flour, and 5 ml baking-powder, if desired.
250g (500ml) bran-rich self-raising flour, sifted and husks replaced.
10 ml baking-powder
10 ml ground cinnamon
2 ml salt
8 ml #Tantalize Liquid #Sweetener
250 g carrots, scraped and grated
Juice and finely grated rind of one large orange
3 extra-large eggs, beaten
125 ml sunflower oil
Cream Cheese Icing
250 g tub low-fat smooth cottage cheese
Finely grated rind of half an orange
4 drops Tantalize Liquid Sweetener
5 ml gelatine, soaked in
25 ml fresh orange juice
½ tsp #DashofOrange
Thin slices of orange rind
Walnut halves (optional)
