I love the combination of steak and risotto. The creaminess and richness of the risotto is balanced so well by the earthiness of the steak, and every bite leaves you wanting more. It's a perfect meal for date night or the entire family with it's versatility. It's just one of those meals you walk away from feeling like everything is good in life. Below is the recipe for parmesan risotto. Serve it under slices of your favorite cut of steak.
5c chicken stock, 2T olive oil, 1 onion, diced, 1.5c Arborio rice, uncooked, 1/2tsp salt, 2T butter, 1tsp pepper, 4oz grated Parmesan cheese, 8oz green peas
1️⃣ Bring stock to simmer in large sauce pan, being careful not to boil. 2️⃣ Heat Dutch oven over medium heat with olive oil. 3️⃣ Add onion and cook five minutes. 4️⃣ Add the rice and salt. Cook one minute stirring frequently. 5️⃣ Add 1/2c stock to the rice. Cook two minutes or until liquid is absorbed, approx two min. 6️⃣ Stir in 1.5c stock and cook until liquid is absorbed, stirring frequently. 7️⃣ Add remaining stock, 1/2c at a time, stirring constantly. Do not add more stock until the previous 1/2c is absorbed, about 25 min. 8️⃣ Remove pan from heat. Stir in butter, pepper, peas, and cheese. Serve on bowls with steak slices over top. .

Easy and versital dinner idea... Crockpot taco chicken.
All it takes is 2-3 chicken breast, about 1/4 a cup of broth (water works as well), and Taco seasoning (I make my own mix but a packet will work fine) Cook on low about 6-7 hours and shred.

Meal 2: Southwestern chopped salad, 4 oz chicken breast (20C/12F/31P)
Meal 3: 3 oz cooked turkey burger, 37 g balsamic caramelized onions, whole wheat bun, chipotle cheddar cheese slice (31C/17F/32P)
Preworkout: Protein waffles (3 egg whites, 1/2 cup oats, 1/2 cup low-fat cottage cheese), 1/2 cup unsweetened applesauce, 1/4 cup sugar-free syrup, 1/2 banana (68C/5F/36P)
Postworkout: Everything bagel, 3 oz turkey, pepperjack Laughing Cow wedge, 1 teaspoon Sriracha, 1 teaspoon mustard (56C/7F/30P)
Meal 6: Jalapeño popper chicken, 150 g Greek yogurt mashed potatoes, 1/2 cup broccoli, 1/2 tablespoon olive oil (45C/15F/35P)
Was given some local giant sized chicken legs to BBQ (tossed in salt, pepper, and a little sesame oil), have to thank my buddy Brad for the delicious treat!!
Tossed a few cobs on the grill as well, and a salad consisting primarily of veg from my garden... Hard to beat!!
Finished it off with an @wildrosebrewery "barracks brown ale."
