Wow CHOCOLATE AVOCADO MOUSSE CAKE 🥑🍫 and it's also RAW 🙌🏼 HEALTHY & perfect for any reason!

Recipe:

1 cup almonds 
1/4 cup cocoa powder Peruvian cocoa from @thesourcespringfield 
3 tablespoon coconut oil 
1/2 cup pitted dates (7 pitted dates) 
1 pinch of Celtic salt 
1/2 cup desiccated coconut 
Blend in blender or Thermomix until it's mixed and looks crunchy. 
Place on paper bake and mould. Flatten it down. Then make the mousse 
Avocado Mousse 🥑🍫 1 cup Peruvian cocoa powder 
1/2 cup coconut oil melted 
1/1-2 to 2 avocados 🥑 
2-4 tablespoon rice malt syrup or honey
1 cup water 
Blend well or Thermomix it. Until it's mousse. Taste it and see if your happy with the sweetness. Add more sweetness if needed but to be honest it won't need it. Don't forget that once it's with the base, the dates carry a lot of sweetness. So this will be a balanced cake. 
Place the mousse mix on top of the base. Refrigerate for 1-2 hours. Done! Enjoy and keep in the fridge or freezer if you want it to last more than a week.

In addition to that, eating mostly plant based for over a month now has me feeling amazing! My energy levels have shot through the roof (allowing for 5 am workouts and a full 10 hour work day with a group of 2-5 year olds), my hormonal acne is almost completely gone (yep, 32 and still battling it), and my gut is happy again! No more daily bloating and energy crashes... • • •

The scent of these delicious dairy-free Pumpkin and Coconut Muffins is all kinds of amazing...but I’ll just say it here...they taste even better.

This recipe is inspired by friend Noelle from @motherhoodandmeals and when I saw she had paired pumpkin and coconut I new I had to try my own muffin recipe using this combo (thanks Noelle x). And here it is!

PUMPKIN & COCONUT MUFFINS
.
1 packed cup of roasted mashed pumpkin
1 cup of coconut cream
1/2 cup of coconut or olive oil
1/4 cup of maple syrup
1 tbsp vanilla bean paste
2 eggs
2 cups of self raising flour
1/3 cup of desiccated coconut
1/2 teaspoon of cinnamon
Pepita seeds to top (optional)

1. Preheat oven to 180c and grease your muffin tin
2. In a large bowl whisk together to combine the pumpkin and wet ingredients together. If you’re using coconut oil ensure the ingredients are at room temperature
3. When the mixture is combined slowly add the dry ingredients until just mixed through. Do not overmix
4. Spoon into your prepared muffin tin, top with pepita seeds and bake the muffins for around 15 minutes until they are lightly golden on top and a skewer inserted into the centre of the muffin comes out clean
5. Cool in the tin for 5 minutes before cooking further on a baking rack

On work days I eat dinner at the salon. Zucchini noodles are one of my favorite ways to freshen up leftovers. I cut them using the smallest end of my spiralizer and pack them in a Mason jar with whatever else is on hand (today it was applewood smoked ham, caramelized leeks and Meyer lemon garlic rice). I heat it all together in the microwave and as soon as the meat is hot, the noodles are cooked. Hearty, filling and - most importantly - fast and easy. 🍋

Occasionally when I prepare stalky vegetables such as Kale, Collards and Chard I save the stems and add them to my smoothies. The stems from these vegetable are said to be a great source of vitamins, minerals and fiber. In addition to smoothies, they can also be combined with other vegetable "scraps" to make broth or blanched for a healthy snack. These are just a few ways to make use of the stalks the next time you have kale. They are lots of recipe ideas online. *

I used to never notice. I just ate what sounded good. 
I didn’t realize before how eating the right things can make you feel. It’s crazy! Don’t get me wrong, I love me some pizza and wine sometimes, but on an average day, I want to feel amazing!
