Third post of the day... who am I?! Love having time to cook on the weekends! I've been craving apple pie lately, but didn't feel like putting in the time or effort to make a paleo pie crust from scratch. Instead, I made just the filling from @againstallgrain's apple pie recipe (in the Celebrations cookbook), and topped it with the streusel topping from the Pear Berry Crisp in her first book... baked for 45 mins, then added some @lunaandlarrys vanilla coconut milk ice cream 😍🍎 This is acceptable to eat for breakfast too, right? 😋 ok, kitchen is closed for the day ✌🏻

Crisp, crunchy varieties of persimmons, like Fuyus, are great eaten out of hand, sliced into salads, and diced into salsas, but this cake, is a perfect way to show off the softer Hachiya types, which need to be completely soft before they are eaten. This cake is a great one for the Thanksgiving or Christmas buffet.

Everyone loves a BLT .. even a non pig eater . Introducing the TLT . Believe it or not, in 4 easy steps you can turn a block of white, spongy , nothingness called tofu into something delicious. 1. Press 2. Slice 3. Marinate 4. Bake till golden brown . The TLT marinade consisted of tamari, veggie broth, little maple syrup, liquid smoke, catsup, olive oil, garlic powder, lemon juice . Buy some sprouted grain bread and a jar of Vegenaise and have at it before all the good tomatoes are gone !

Thai Coconut Green Curry Salmon by @thedefineddish - probably one of my most favorite meals of all time. I had almost forgotten about it until I saw Alex make it on her stories last week and immediately ran to the store to get all the ingredients 😋 The sauce reminds me a lot of Tom Kha Gai soup with the fish sauce and lime juice...and when you add in the mushrooms, red peppers, bok choy, zucchini and baked salmon it makes for an incredible flavor combo! This dish is surprisingly easy to make (30 mins or less) and it's also Whole30 friendly. If you're a Thai food fan, you gotta try this! Recipe below:
