There is something so serene about sunday morning. ✨ I slept in and spent the morning face-timing my sister. I miss my family so much, especially on Sundays. It was always our day.
I had an ambitious workout planned this morning but injured my foot running and decided to take a rest day! So banana pancakes and this is us it is 💕
2 mashes bananas
3/4 cup almond milk
1 cup oat flour
1/2 cup oats
3/4 tsp baking powder
Pinch of sea salt
1/4 blueberries :: mix banana and milk in one bowl. Mix dry ingredients in another. Mix wet & dry then add the blueberries! Heat non stick griddle over low hear. Pour about 1/2 cup batter for each pancake cook 2-3 mins a side.

I was so eggcited 🍳 to dig into this delicious bibimbap at @chooseandmix, which opened 6 months ago. Bibimbap is a korean dish that translates to "mixed rice". You get to choose your base (white rice 🍚, brown rice, or sweet potato noodles), vegetables (onion, broccoli 🌳, red cabbage, zuchini, red pepper, mushroom, bean sprouts, jalopenos, or egg 🍳 strips), a protein (spicy chicken 🌶🐔, chicken 🐓, beef 🐄, or tofu), & finally sauces (soy lemon, hot paste, sesame oil, teriyaki, or gluten free). I got white rice 🍚, spicy chicken 🌶🐔, all veggies, all sauces 💦 & a fried egg 🍳. I also chose to have mine in a stone bowl which holds heat 🔥 & makes the rice extra crispy 👌. The meal came out sizzling & smelled delicious...tasted even better, must try! Thank you @jackcampbell_24 for the reccomendation!

Yesterday I went to the @westcoastcraft event, hung out with @hellolisalin & @the_bojon_gourmet and saw a ton of amazing ceramics and other gorgeous crafts. But I was overwhelmed by the sheer number of choices, and, as always the case for me, that meant I left empty handed.
Part of the reason I didn’t buy anything wasn’t that I didn’t WANT to buy stuff (there was some beautiful work there and I love supporting local and small companies) but I have so much stuff already and I’m in the process of making my own ceramics too. I just couldn’t justify it. ✋
So I said no to all the gorgeousness with a little bit of regret. But then I found this photo in my archives. It’s of an apple pie bar with an easy caramel sauce (you make the caramel in the microwave!). I remember shooting the photo in my bedroom, as I chased the winter light as the sun set. And I forgot I owned this plate, which I absolutely adore. It remind me not only of how great this recipe is (the crust also doubles as the crumb topping, making this a great holiday dessert for a crowd) but also that if I can’t remember ALL the plates and props I already own, I probably don’t need to buy more of them.
So maybe next year I’ll buy more stuff. But for now, I’m holding off on it. My one bedroom apartment is maxed out as it is and I’ll be bringing more plates and ceramics home from the studio after my glaze fire in a couple of weeks. Maybe I’ll even give some of it away. We’ll see. I’m trying this while non-materialistic experiment for just a little bit. Let’s see if it takes. ✋

Vegan Black Bean Lunchbox with all greens rice
Black bean stew, with cauliflower, roasted pepper, beetroot and a lot more goodies. We will make a video at some point of this recipe, because it is delicious.
Blended spinach and mixed green leaves with extra virgin olive oil, combined with basmati rice.
Such a nutritious meal and totally delicious. We’ve had a few omnivores sniffing around the pot the last couple of days asking for the recipe.
Obviously this lunchbox idea is best served warm.
