After an intense CrossFit session at @raw_iron_ I thought I'd treat myself with some intense pancakes🏋🏽♀️🙈
Fluffy Protein Pancakes🥞
(Makes about 8 pancakes)
• 2 eggs
• 1 large ripe banana
• 40g whey protein powder (I used vanilla)
• 1/8 tsp. cinnamon
• 1/4 tsp. baking powder
• 1/4 tsp. salt
• Additional additives (choc chips, blueberries etc)
1. In two separate bowls, separate the egg whites and egg yolks (be careful not to get any yolk in the whites bowl as they won't make peaks when beaten)
2. Beat the egg whites until they form soft white peaks
3. In the yolk bowl, add rest of ingredients and beat until smooth.
4. Add 1/3 of the egg white mixture and fold with a spoon until combined. Add another 1/3 and do the same, then do the same again with the last third of the egg whites
5. Heat a frypan and add oil or low fat butter (I use nuttelex as it's made from sunflower oil)
6. Each pancake is 1/4 of a cup of mixture, fry away!!
7. Option: I added dark chocolate chips into the mixture before cooking. You can add anything to this mixture for a little extra addition such as blueberries
8. Serve with maple syrup, banana & walnuts or anything you desire 😍

Today's lunch spread featuring @rachaelsgoodeats Avocado flower I attempted to make!😆 didn't turn out too bad actually! For this salad as my base I have iceberg lettuce and mixed greens mixed with @hilaryseatwell chia ranch dressing (ingredients on point for a salad dressing), topped with zoodles and nooch, sautéed red bell pepper, @wildbrine red cabbage and beer sauerkraut, leftover ground turkey from yesterday that is cooked with apples, red onion, and homemade vegan cashew ricotta topped with @sirkensingtons ketchup! Then sprinkled the avo with hemp seeds and the bell pepper with everything bagel seasoning! So satisfying! #kassidyandkale#avocadoflower
