Let’s talk about GAINZ for a sec. 💪🏽.
I’ll start off by explaining the pic. Left was July 11th (day 2 of this go around), middle was my leanest (2015) and right was this morning (month 3).
In 2015 I was doing what a lot of what people do when they start a journey.. tons and tons of cardio.. on the treadmill and/or elliptical.
What I wasn’t focused on was lifting HEAVY to tone and shape my body. I’ve always been ‘strong’ and had ‘muscles’ under my fat but not from lifting, I was just a tomboy growing up.. but this go around I have educated myself a lot more and have been applying what I’ve learned over the years. What TYPES of cardio to do for the best results.
I’m not trying to be skinny and/or ‘small’.. eff that.. I’m trying to be a sexy, lean, BEAST. With define legs/arms and a nice booty 😏. That’s the goal.
I can see that my biceps and shoulders have grown from all this lifting and can’t wait for the definition to show through. I’m 100% confident that my results will come faster and better than last time because I now know how to do cardio efficiently. Don’t stay in your comfort zone just cause you’re good at it.

Today's breakfast was a 🎃 english muffin (5sp), a tiny bit of butter on the english muffin (1sp), and 🍇 (0sp). I have been back on track since Monday and it has been rough. I have been having GI issues that started almost two weeks ago and the doctors haven't been able to figure it out. I'm hoping to get into a specialist soon. Most of the foods that I eat are going to be repeats for now, so l will post when I can. It's tough being back on track and not being able to eat some of my staples that keep me full, but I'm going to power through this 💪🏼.
Chilli from the freezer tonight! A layer of spinach, tomato and sweet corn topped with a pile of chips and crowned with a spicy chilli 🌶
A delicious chilli is so versatile and serve it with rice, chips, zoodles, noodles, baked potatoes or even as a pasta bake. This recipe is packed with flavour but feel free to adapt and add additional speed vegetables that you might have in.
Chilli con carne 🌶
Ingredients for at least 4 hearty portions!
Low calorie cooking spray
1 large onion, finely chopped
1 red pepper chopped
2-3 garlic cloves, finely chopped
2-3 fresh chillies, deseeded (unless you want extra heat) and chopped
2 tsp ground cumin
1 tsp ground coriander
2-3 tsp of chilli powder (your own taste)
1 tsp paprika
Pinch cayenne pepper
400g tin chopped tomatoes or passata
1 level tbsp tomato purée
300ml water mixed with 2 beef stock cubes
Splash of Worcestershire sauce
Salt and freshly ground black pepper
500g lean beef mince (5% fat)
1 can red kidney beans
Optional: I add another can of beans - baked, mixed or black beans and sometimes also add some rinsed red lentils too (which I would add with the stock). Method
1. Spray a pan with low calorie cooking spray and brown the beef. Take your time with this stage as it makes a real difference with the flavour. Set beef aside
2. Sauté the onions gently over a low heat for 5-10 minutes, until golden.
3. Add the red pepper, garlic, chillies, browned beef and all the spices and continue to sauté stirring occasionally, for a few minutes.
4. Pop in the tomatoes (or passata), tomato purée, Worcestershire sauce and stock. Stir well and bring to a boil.
5. Reduce the heat and simmer gently for 20 - 30 minutes, until it is slightly reduced.
6. Season with salt and pepper add the drained kidney beans, additional beans if using, and heat through for another 10 minutes. #chilli#foodblogger#colourful#widn

Going all in with my current prep, I still have 20 weeks to go, but I'm feeling confident about everything!!.

Looking back, I feel so proud on how far I've come. When you work on grad applications no one tells you how much work it takes. You do a couple of things a day and it feels like you still have so much more to do. Similar to fitness goals, every small effort you put into something will eventually add up. It takes time for a seed to grow, so make sure you plant the seed and water it daily. Even if you can't see results right away, one day that seed will become a fruitful tree 🌳🌸🍊keep grinding peeps 💪🏼📖📚
