For the smoothie:
1 cup frozen cauliflower
1 cup almond milk
1 scoop chocolate protein powder
1 Tbs ground flax or chia
2 Tbs peanut butter
1 Tbs cacao nibs

Who is up for making a Christmas tree salad? 🎄😋✌️
- 4 cups baby arugula
- 2 Persian cucumbers, sliced
- 1 avocado, cut in half and sliced, then arranged into avocado roses
- 1 head buttercup lettuce, bases trimmed and leaves separated
- 1/2 yellow bell pepper, use big star-shaped cookie cutter to cut out a star as topper
- 1/2 big carrot, peeled and sliced, then use small star-shaped cookie cutter to cut out stars
- 2 cups of heirloom small tomatoes
- 1 stick of celery, cut in half lengthways
- 5-6 radishes, green leaves cut, leave the root, cut into little ornament style
- 1/4 cup chopped toasted macadamia nuts
- Slices of baguette
Papaya Seeds Vinaigrette:
- 1 tbsp fresh papaya seeds
- 1/2 small shallot
- 1/4 cup raspberry vinegar, or apple cider vinegar, or white balsamic vinegar
- 2 tbsp agave syrup
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/3 cup olive oil
- Pepper, to taste
Blend everything together until smooth. Then drizzle it over your favorite salad.
How it's made:
Arrange the leaves on a very large platter or cutting board in a Christmas tree shape. The platter should be large enough to accommodate a star on top and a trunk on the bottom. Arrange a layer of little buttercup lettuce leaves to create tiers on the tree. Use celery sticks to create the trunk of the tree. Place the bell pepper star at the top of the tree. Scatter cucumber, tomatoes, carrots, radish and macadamia on top. Drizzle papaya seeds vinaigrette or your favorite vinaigrette on top. Decorate the ground under the tree with slices of bread. Serve immediately.

From now till Christmas, I’ll be posting pictures on what this holiday means to me! To start it off, this time of the year I stop counting calories and just enjoy. No diets, no restrictions. Let’s all stop being so hard on ourselves for the holiday is a time of INDULGENCE.
Here we go with more meat porn. Because I just love steak so much. This here is a top sirloin cooked medium rare. The fat cap was gorgeous on this. I cooked this fat side down on low before I flipped it on their side. I don’t ever use any butter because the fat drippings has enough umami. 🐮♨️
This Honey Posset recipe is my go to entertaining dessert because they require no special ingredients, can be made ahead and they look so fancy! We won’t tell anyone how insanely simple they are. We made some with lavender and it's the PERFECT addition!
1 quart (4 cups) cream (heavy or regular whipping cream both work)
½ cup honey
⅓ cup lemon juice
Juice of ½ lime (about 1 tablespoon juice)
4-5 lavender sprigs (be sure they are not sprayed with pesticides)
In a medium saucepan bring cream and honey to boil over medium-high heat. Stir continually until honey is fully combined. Boil for 3 full minutes stirring continually. You may need to lower heat to prevent boiling over. Remove from stovetop.
All lemon and lime juice and stir.
Mix in lavender sprigs so they are fully submerged and allow to steep for 10-20 minutes (to intensity of lavender flavor desired).
Remove sprigs and pour into ramekins. Top with a few tiny flowers.
Cover tightly with plastic wrap and chill, minimum of 2 hours. You can also pop them in the freezer for 30-40 minutes if you are running late and they will be decently set, but I prefer overnight to let the flavors meld.
HOLY GRAIL UNLOCKED 🏆 I’ve been on a quest to make the Platonic ideal of cacio e pepe for years. YEARS! So many recipes, well-intentioned as they are, include ingredients that help to approximate the texture and flavor of this spare yet somehow transcendent dish, which is creamy without cream, rich without oil or butter. But in real cacio e pepe, there are really only three ingredients: pasta, Pecorino Romano, and freshly ground black pepper. And a secret ingredient hiding in plain sight: water. If one dish is emblematic of real-life alchemy, it’s this one.
Yesterday, the spirit of una Nonna Romana must have slipped into my kitchen when I wasn’t watching, because I somehow threw together this perfect, stunning cacio e pepe as a Friday lunch for one while editing recipes. It truly hit home for me how much of this dish is based on intuition, technique, and a certain unflappability and perseverance. (I mean basically rules for living, right??) I want very much to share this recipe with you soon, and I think it will also require a short essay on feeling and vibes and the other mystical kitchen hoo-ha that you know I love so deeply.
