Hearty T&A Soup! (😂 Troy & Amanda)
I came up with this recipe because of Troy's desire to start limiting gluten. "I want something hearty and filling, if I'm not gonna do pasta. Can we make a kale soup?" So we went to the store and grabbed:
1 container #vegetablestock
2 bunches #kale
1 bag small yellow #potatoes
2 cans #whitebeans
2 yellow #onion
2 bulbs #garlic
2-3 inch piece of #ginger
The kale and stock and beans were organic, but the rest of the ingredients were conventional due to lack of availability.
All of this went into the soup, Troy prepped the vegetables and I supervised. We added the stock to a pot and filled the soup container with water, adding it to the pot also (50/50 stock to water). First the onion was diced and the garlic was minced, added to the pot before it boiled. Then we added the potatoes (cut to small cubes), and Troy had some Mrs. Dash lying around which seemed pretty safe. The potatoes were about half done cooking we added the canned beans with some of the liquid they came in. The kale was chopped up and added, destemmed, along with 3-4 T of soy-free #earthbalance we had at the house. I added 4 T #tahini to thicken up, 4T #soysauce and allowed it to come down to a simmer. We avoided overcooking the kale, finished with #himalayansalt and #rainbowpepper ! The flavor is awesome. When we served ourselves we added a little #habañero hot sauce, which was tasty too. It was just enough to add flavor without being too spicy.
This will definitely be a family staple. We also talked about adding mushrooms next time. I added a little udo's oil to my bowl, because of the dha for the baby. 4.5 months today!

BEEF, SWEET POTATO, & APPLE BREAKFAST HASH
1 lb ground beef
2 Tbsp cooking fat
1 sweet potato, diced into 1/4” to 1/2” pieces
1 apple, diced
1/2 onion, chopped
1/4 cup chopped pecans
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes
1/2 tsp chili powder
1/2 tsp oregano
1/2 tsp garlic powder
1/2 tsp cinnamon
1/4 cup orange or apple juice
1 Tbsp apple cider vinegar
1 cup baby spinach, chopped
HEAT the cooking fat in a large skillet over medium-high heat.
ADD the ground beef, breaking it apart with a wooden spoon and cooking for 3 to 4 minutes.
ADD the onion, sweet potato, apple, pecans, and spices.
SAUTE until the beef is fully browned & sweet potatoes are tender.
POUR in the juice and apple cider vinegar, and add the chopped spinach.
STIR and scrape any browned bits off the bottoms of the pan.
COOK until the spinach is wilted, just a few minutes.
SERVE hot all on its own or topped with a fried egg.
