Hello! Let's talk Lo Dough... So I thought I'd try this as I've seen it advertised lots. It is gf, low in fat, super low carb etc etc. I went for a starter pack knowing that I'd probably never buy it again as it's stupidly expensive... As in these, essentially two slices of bread, were £5. FIVE POUND! Anyway I wanted to see what the fuss was about so... They arrived as you can see, in a box, two tortilla sized pieces. Reviews told me to expect something that had the texture and taste of real bread - no. I tried a bit as it was and was disappointed, I've tasted much better, much cheaper gf bread. So I decided to make a toastie with it as suggested on the post card that comes in the box... Welllll that didn't go much better! The picture you see here of the toastie, that was on for well over 20 minutes. I buttered the outside but it didn't crisp, it didn't go very brown it just went rubbery. I had to take it out in the end as the cheese was leaking and burning... So overall, very disappointed.

Firstly the texture is wonderful no oversoaked oats that you’d by out of the store it’s all fresh that provides you with the perfect crunch. The cinnamon makes itself known yet not overpowering to the overall taste mixed with some sort of glaze that has me saying I can’t believe it’s not sugar. The nut mixture includes pecans, almonds, walnuts and macadamia. The coconut flakes, cinnamon, macadamia and walnuts just work in perfect harmony. 5/5 all day I can’t wait to see what else to top this on. I don’t really follow any specific recipe - my typical method is to just sauté or roast up some veggies before adding them to a dish with some eggs, then bake it all up together for 25 minutes. That’s it! Sometimes I use this glass pie dish, other times I use a rectangular dish...truly doesn’t matter! So versatile & a great way to use up whatever veggies you’ve got in the fridge, pantry or freezer. Would also be great with goat cheese or some chicken sausage!!

Tonight’s dinner kinda looks like a hot mess 🤷🏻♀️ but delicious nonetheless 😋 turkey + zoodles + bell peppers + eggplant tomato sauce 🍽 between the zucchini I put in my smoothies and all the zoodles I eat, I’m surprised I haven’t turned into a zucchini tbh 🙄 .

My Monday blues always gets turned around with my #meatlessmonday dinners 💚 made the quickest zucchini quinoa salad with roasted pine nuts! Simply sauté chopped zucchini and summer squash in olive oil and S+P for 4 minutes, add cooked quinoa to pan and heat for 1 more minute, and pour cooked veggies over a small bed of greens. drizzle a simple lemon and red chili flake dressing on top, and sprinkle a small handful of toasted pine nuts to top off dish! 🥄💛VEGAN COCONUT-CURRY BROCCOLI SOUP💛
The cold is finally here and soup season has officially begun. This yummy vegan broccoli soup makes for a comforting and satisfying meal. It may look like a regular broccoli soup but i assure you it’s not. The coconut milk makes it sweet, the jalapeño gives it a nice kick and the curry makes it so flavourful, its truly the perfect blend.
Here’s how to make it:
➕Heat 3 tbs coconut oil (you can also use olive oil) in a soup pot
➕Add in 1 large chopped onion and 1 seeded and minced jalapeño
➕Sauté on medium heat for 5-6 minutes (you can opt out of the jalapeño as it will make it a little spicy but for someone who can’t stand spicy food, i actually enjoyed it)
➕Add 4 cloves minced garlic and thumb sized ginger, minced and peeled. Sauté for a couple of minutes
➕Add in 2 bunches of chopped broccoli (including the stems), mix well
➕Pour in 1 box (4 cups) of vegetable broth, bring to a boil, then lower heat to a simmer.
➕Stir in 2 tablespoon curry powder, 1 teaspoon ground coriander, 1 teaspoon turmeric powder and 1 teaspoon cumin. Also, 1/2 teaspoon sea salt and 1/2 teaspoon ground pepper (more or less to taste)
➕Place lid and let simmer for about 15 minutes
➕Remove from heat and using a stick blender, blend the broccoli (you can blend more if you want it liquid or less if you want it chunky. Next time i will definitely leave more chunks)
➕Pour in 1 can of organic full-fat coconut milk, stir well, heat-up and enjoy!
