Good evening. Tonight’s dinner is wild caught scallops pan seared in in a little butter, olive oil, fresh garlic, white wine and lemon juice with half a sweet potato and green beans sautéed in garlic and olive oil. I shared it with a friend and so glad she loved it. Hope you have a great night!
Good evening. I’m not handling the cold weather too well. I’m such a light weight when it comes to the frigid air and like to hibernate inside, drink tea and eat soup. This traditional Italian white bean and escarole soup is “souper” easy to make in just 15 minutes, low calorie, vegan and made with a few simple ingredients. Here’s how to make it..
1 tablespoon minced garlic.
1/4 cup chopped yellow onion
2 tablespoons olive oil
1/4 cup diced tomatoes
4 cups water with 2 veggie bouillon cubes or 4 cups veggie stock.
1 BPA free can of organic cannellini beans.
1 head of escarole roughly chopped.
Salt and pepper to taste
On the stove top heat olive oil in a medium pot until hot then add the onion. Cook stirring occasionally until the onions start to sweat then add the garlic and season with salt and pepper. Cook for another minute then add tomatoes until heated through. Add the water and veggie bouillon and bring to a boil. Stir in the escarole and reduce heat to simmer. Once the escarole is wilted add the cannellini beans. Continue to simmer for another 5 minutes, remove from heat and serve. Add salt and pepper to taste if desired or top with Parmesan cheese and serve with sourdough bread. This soup has always been warm and comforting and one of my favorites.

Hickory Bbq Berkshire Baby Backs... Smoky sweet savory spicy and sticky finger lickin’ good w/ chipotle honey glaze. Great smoke flavor and a good tender bite off the bone texture. This might be the best batch yet !
I used the 3-2-1 method with Berkshire racks from @buyranchdirect. Seasoned w/ @caribeque Honey Heat. Smoked with hickory on @traegergrills. Wrapped w/ butter, brown sug, chipotle, salt, maple syrup and a splash of coke. Finished with a light brush of chipotle honey sauce.
Sweet Breaky with pancakes, fresh made Chia-raspberries jam, Greek yoghurt, blueberries, agave syrup, almond. Happy Friday! ❤

Tonight I cooked lamb cutlets that were marinated with fresh rosemary, mint, lemon and garlic. I Blanched some beans and made a tomato salsa with a red onion, olive oil, s+p, that all sat on some baby spinach leaves with freshly shaved Parmesan, andddddd I also made my own Greek yoghurt dipping sauces, one was lemon and mint, and the other one was chilli and garlic, the 3rd one was basil pesto. What a delish feed 👌🏼.

Needless to say it was well worth the effort and very simple to do .. salmon with lemon, butter. thyme salt and pepper in the oven for 12 minutes at 400farenheight or 200celsius..keeping my eye on it had to do it a little longer making sure it was just translucent in the middle.. very tasty and mouth watering.. I had it with veggies ...
