Are you all sick of the tomato posts yet?!?! My feed is definitely looking pretty red! You do know tomatoes and are a fruit right?!? So why don't we make it into jam more often? This sweet and spicy jam is literally an addiction, once you start you can't stop! A combination of cherry tomatoes, honey, sugar and red pepper flakes makes this undeniably delicious. I enjoy with any cheese (because I love cheese!) I have some toast and lebné with it here, that tangy spread with the sweet and heat is perfect! Hope you try it today!!! #cosetteskitchen#tomatojam
5lbs of small yellow, orange or red cherry tomatoes (less seeds/water and generally sweeter)
2 cups of granulated sugar
1 cup honey
2 tsp freshly grated lemon zest
1/2 cup of fresh lemon juice
1 tsp cinnamon
2 heaping tsp red pepper flakes
1 tbsp kosher salt
1 tbsp corn starch + water
1. Combine all the ingredients but corn starch in non-reactive pot and bring to a boil then reduce to a simmer.
2. Stir every 10 minutes to make sure nothing is sticking to the bottom. Continue to simmer and stir until it thickens and reaches a thick jam-like consistency, about 2-3 hours. Make a corn starch slurry with 1 tablespoon corn starch and a bit of water. Add to jam mixture.
3. At this point, you can jar them using sterilized jars (leave 1/4" headspace). Of you can store in fridge for 3 weeks to a month. I generally keep one in the fridge and freeze the other jars and pull out as needed. .
