✨Recipe & GIVEAWAY✨ Ok babes, this is what you’ve been asking for: a recipe for these vegan & GF Vanilla Dream Crepes w/ Berry Coconut Cream filling. Since I first posted a photo of these a week ago I have literally recieved hunderds of messages people asking for the recipe. And I have done my best to answer and tell everyone that yes, the recipe is coming soon soon soon! It’s so heart-warming that the photo has resonated so strongly with you guys and that you have been sharing it and wanna try them out. Vanilla Crepes with Berry Coconut Cream filling
Makes about 5 crepes
1 cup oat flour (or rolled oats blended to flour)
5 tbsp potato starch
2 tbsp coconut sugar
tiny pinch of sea salt
1 tsp vanilla extract
1 ¼ cup sparkly water
2 tbsp coconut oil, melted
Preheat the skillet. Mix the dry ingredients in a bowl. Add vanilla, sparkly water and oil. Stir until even. Add a drop of coconut oil on the skillet and pour on some dough so that you get a thin round crepe. Cook until the surface looks dry, flip with a thin spatula and cook the other side. Prepare the rest of the crepes. Set aside & prepare the filling.
Berry Coconut Whipped Cream:
1 can full fat coconut milk, kept in a fridge
2 tbsp maple syrup
½ tsp vanilla powder
2 tsp blueberry powder
Open the coconut milk can and scoop out the white thick paste into a bowl . Add the remaining ingredients and whip with a mixer until fluffy. If the mixture becomes too liquid, place it into a freezer for 10 min. ...(✨Rest of the recipe in the comments!✨)

And lemme tell you, these babes are delish and so easy to make ✨🤘🏼🍠🌿 I like using either goat’s cheese or a vegan cream cheese and sometimes apple instead of pear. How good are Facebook memories?! What a difference one year can make.
I've lost 11kg's following the 28 day challenges and using the healthy mummy smoothies but today I don't want to only talk about the weight I have lost but what I have gained in the process.
When I started my healthy mummy journey I took up running not only to help with weight loss but to also have an outlet when I felt depressed and overwhelmed with every day's battle.
Running has helped me a lot with working through my emotions and frustration after seperating from my husband last year but it has also shown me how much I can achieve when I really believe in myself.
If someone would have told me that I will be running two half marathons this year I would have probably laughed at them and said no way!
But I did, and each time I came out stronger and feeling like I can battle anything life will though at me.
When you cross that finish line in pure exhaustion and almost unable to put one foot in front of the other because your legs have started to give in 2kms ago and all your life you thought you would never be able to achieve what you just did it leaves you feeling like your are on top of the world and stronger than you have ever imagined you could be.
Loosing weight is not only about the looks but also about the feeling inside. Your growing confidence, your bravery of going past that comfort zone and achieving what you thought would never be possible. Taking on new challenges, challenging yourself and proving to yourself that you can achieve anything if you really believe in yourself.
It doesn't have to be a half marathon, it can be your goal to do a unassisted pull up or to join a pole dancing class or to climb the highest mountain in Australia.
Anything is possible if you just work hard enough for your goals and dreams but most importantly BELIEVE IN YOURSELF ❤️

These yoghurt barks are the perfect summer treat for everyone!! All you need to do is:
🍓Mix 500g of natural Greek Yoghurt (I use Jalna) with 2 tsp vanilla essence
🍓Lay the yoghurt on a baking sheet and spread out evenly
🍓Sprinkle your favourite fruit on top & press down into the yoghurt so they stick
🍓Pop in the freezer for 3 hours, break up into pieces and enjoy!

Santa and I are serving up some Christmas cheer this morning. Clearly he is just as excited to see me as I am to see him. Got my workout in!! I’m in maintenance mode. What does that mean? Well, I’m enjoying life! A few treats, wine, Xmas parties....and exercise.
I’ll be going ALL IN with our new program in January. I cannot wait to see the results!! Until then, it’s all about moderation.

must be some sort of miracle but the results are in: in 8 weeks I lost 5.1% body fat and 3.1kg fat mass! 🤓🤓Even after cheating lots and lots...and lots!! 😂🐽maybe my body responds well to chocolate brownies? 🤔relaxing and eating like a 🐽 for the next 4 weeks so will probs lose the baby abs but ready to start the next challenge in jan! YAY💪🏼
