Celebrating St. Patrick’s Day with a green smoothie!☘️☘️
100g frozen smoothie mix from @aldi_ireland (kale, banana and mango)
1 frozen banana
1 tbsp @meridianfoods smooth peanut butter
3 tbsp Greek yogurt
almond milk to desired consistency
When we first started dating, sweet potato and chickpeas were our “thing” Tim and I did every night.
Over a year later we still eat the same, I’ve just got better at making sweet potato look more interesting with the same amount of effort. Bake the potatoes, heat the chickpeas with some spices, blend tahini with maple syrup and lemon. Thirty minutes, minimal prep. Tastes amazing. Makes you feel even more amazing. 👌🏻

YAY WOMEN: Reflecting on the wonderful day that was the Plant Powered Women Leadership Conference. Today was history in the making and it was so wonderful to be there. Thank you to @kathydivine for all that you do, for women, for men, for animals, for vegans, for all of us. Listening to powerful plant based women who are all leaders in their field, commanding change and heralding their dreams was such an inspiration. It reminded me how important this life is, and how capable we are of doing whatever we want. Kindness, compassion and continuing to evolve for the sake of the animals, the future of the planet and for my health is the lovely life for me. Last year I made this Coconut Chia Pudding Garden to celebrate #InternationalWomensDay and it feels pretty appropriate to repost it now... #govegan#ppwconference#veganwomen

I was at the post office earlier shipping out print orders when @michellevegan commented on my last photo with an article from my favorite @onegreenplanet. I hadn't checked my email yet to see they had sent out several new articles for the week. I had no idea who the article was about, I just knew it was about a photographer by the link... but I never thought it would be about me.
Standing at the counter it took everything in me not to start crying + jumping around out of happiness as the main photo began to load + I could tell it was one of my photos. I feel so honored + unbelievably grateful to be featured.
Thank you so much to @onegreenplanet + Aisling Cronin for writing this amazing article + truly making my year. This fuels me even more to continue my work + do all I can to educate people about animal rights through my photography.
I am also so happy that there were some images from Rancho Relaxo included in the article. I owe so much to @boochaces + honestly feel like I wouldn't be where I am right now if I hadn't photographed her beautiful little rescue family. She has given me the courage to do things I never would have done + her heart inspires me every single day.

One of my biggest mental hurdles was accepting what I look like. Comments on my appearance always hit harder than expected. After a hell of a lot of hard work I’m improving. I’ll never be stop improving, but I know I’ll eventually be able to smile when I catch a glance in the mirror :) - Ben

Friends, the old excuse of; ‘I have no time to be healthy!’ Is one I have heard many a time and one that just doesn’t seem to agree with me.
Full time uni. Part time work. Assignments, exercise, friends, family. Guys I do it too! And guess what?? I still manage to whip up deliciousness in the kitchen?? How?? I worked it the foods and flavours I love. I chose foods that don’t take too long to cook. And foods that are hearty and wholesome and will fill me up.
Did I mention there are 6 ingredients total in this dish?? Keep it simple! ‘Cheesey’ hummus and nutritional yeast bean, corn and pea mix in a warmed wholemeal pita pocket with a side of raw veggies. Too easy 😆🙌☀️👌💛👍☀️ Bean mix:
Lots of peas
Lots of corn
Lots of beans (I used pinto beans and blackbeans)
2 heaped tablespoons of hummus
2 heaped tablespoons nutritional yeast
Steam peas and corn, rinse and warm beans, add to bowl, stir through hummus and nutritional yeast, fill warmed pita pocket. Hazzaa!

Flavoured tofu that's ready to go. This is a good source of protein for those on a plant based diet. I like this brand. The flavour is nice and it's nice cold or heated. This means that it goes well in salads or soups. I got this from Woolworths in Australia for around $4.
