💛VEGAN FLATBREAD PIZZA💛recipe below 🍕👇

Vegan pizza was one of the first things I made (too often) when I started eating vegan. It was a nice segway into getting used to eating more plants 👏
.
Now that I'm eating more whole-food plant based I've tried to cut out processed things as much as possible which includes flatbreads, sadly :( .
But life is alll about balance and feeling deprived of your favorite thing is no fun! So now we have it no more than once a month 😉

I prefer using flat bread since it's crispier and can handle tons of veggies on it 💪

Directions:
▪️Preheat oven to 425, line pizza pans with unbleached parchment paper ▪️Chop + sautee veggies before adding to pizza 🍕 pre-cooking is necessary so the veg don't make your pizza soggy and they crisp better in the oven after. ▪️Add pizza spice while cooking (or sub these spices to make pizza spice: onion, bell pepper, fennel, oregano, garlic, basil, chili pepper, parsley, thyme, marjoram, and celery) ▪️veggies can each be pre-cooked separately or sautéed all together, up to you!
▪️add sauce, veggies to flatbread and add more pizza spice (that stuff is 👏👏) ▪️sprinkle with nutritional yeast or put nutritional yeast/cashews in food processor to make a "cheesier" tasting topping ▪️bake at 425/according to flatbread package directions (usually 15-20min)

Soy muy fan de comer asi en Bowl, el otro día leí un artículo que comer así nos da la impresión de quedar mas satisfechos, no se si sea verdad jaja pero a mi me encanta y vaya que quedo bastante satisfecha 😂😂. Y lo mejor aún es que no existen pasos, reglas o ingredientes a seguir, uno puede hacer sus mezclas con lo que tenga a la mano o en el refrigerador. Por ejemplo yo ayer hornie un mundo de verduras que se andaban queriendo pasar y ya me ahorre mil tiempo para la comida de hoy, asi quedó:
- Cama de Greens (Arugula, Kale y Espinaca).
- Quinoa.
- Salmón Salvaje a la plancha desmenuzado.
- Verduras horneadas (Hongos, Cebolla morada, Pimiento Rojo y Amarillo y Brocoli).
- Papitas de Camote horneadas.
- Aguacate.
Todo bañado en Vinagre Balsámico y jugo de Limón.
De verdad intentenlo, o al menos las verduras al horno, son un super TouchDown para este SuperBowl jaja, ya pues pero de verdad creanme que no se van a arrepentir!!!

I defrost veggies in the fridge the night before so they take less time to steam. I know frozen veggies and microwaves are not ideal, but in 9-5 world, they come in handy 🌱

After a wet walk on the beach, lunch at Sea Monster Noodle Bar in Tofino was the Golden Beet Poke. Delicious - I would highly recommend this eatery if you are ever in Tofino. We have eaten here several times because they have 3 dishes that can be veganized and they are all delicious; and my non-vegan partner loves the poke here so win, win.

Lavender essential oil has medicinal properties, shown to reduce #depression, improve #insomnia and ease labor pains. And anecdotal evidence suggests that lavender oil benefits those with headaches, hangovers, sinus congestion and pain relief. “Much prior research on #lavender has focused on the administration of lavender via an olfactory route. Ingredients
1 cup maple syrup
5 cups pure water
1/4 cup dried lavender. dried, organic culinary lavender
6 lemons, peeled and juiced approx.

Directions

Pour 1/2 the water in a pan, bring to boil and remove from heat
Add maple syrup  and dried lavender let steep for approximately 20 minutes.
Strain mixture and pour into larger container.
Add lemon juice and the remaining water.  Stir well.
Refrigerate #uglybynature

One of my fave #whitepeople foods is pot pie haha. I couldn’t find any vegan pot pie in any local stores and or restaurants so I made my own! Loaded mine with my mushrooms, potatoes, peas, garlic, onions, fresh herbs, homemade cream of mushroom soup, and vegan sour cream 🌿 So flaky, creamy, and perfectly cozy for this rainy day 😍🌧

Yesterday's workout left me feeling SO sore today!! It was a great one and I worked hard!!! I was hesitant to share this video because my six pack is a one pack right now but dude. It's me. It's my body. I earned it and I love it. And when I look at videos like this and have that twinge of "ew" I remember how far I've come and how lucky I am to be on this journey!! 💪💪 when I first did p90x I didn't have weights. I didn't have a pull up assist band to help me. I just had determination and a desire to change. That's all you need!! RECIPE⠀
INGREDIENTS:⠀
3 med size mushrooms⠀
1/4 cup of olive oil⠀
2 Tbs balsamic vinegar⠀
2 Tbs of liquid aminos (or low sodium soy sauce)⠀
Scallions⠀
Lemon⠀
PREP:⠀
1.wash and dice the mushrooms, disregard the stems⠀
2. place on a pyrex⠀
3. mix the sauce ingredients⠀
4. marinate the sauce over the mushroom between 20-40min⠀
5. serve adding some more scallions and lemon peel.⠀

Chocolate Peanut Butter (+ Spinach) Smoothie Bowl

Just frozen bananas + a splash of vanilla + cacao powder + Pb2 (low fat peanut butter powder) + 2 cups spinach + a tiny pinch of salt + pure maple syrup + a little water to get everything moving in the blender = deliciousness! Taste and adjust to your preferences. I topped my smoothie bowl with a little dessicated coconut and some salted peanut sprinkles.

🍁BUTTERNUT SQUASH SOUP!🍁
We finally got some cool fall weather here in the NE to make soup. 🎃 This was my first try making it fresh instead of store bought. So much better.👍 I used a simple recipe you can tweak to your liking. It was so creamy & filling. I served it with Trader Joe's Vegan Artisan French Baguette bread. I never knew that even existed. 🍂🍃🌺
RECIPE ⬇

STEP 1■Cut & cube 2 large butternut  squash approximately 6 cups. Set aside. Save seeds to roast later.
.
STEP 2■In a large stock pot •Add 1 large sweet onion chopped •6 garlic cloves chopped
•1/4 tsp hot pepper flakes
•1/2 tsp greek oregano
•1/2 tsp black pepper
•1/4 tsp nutmeg
Open quart of organic vegetable broth & pour some in pot 2 saute all of the above for approximately 10 minutes

STEP 3■Add the remaining vegetable stock. I used Trader Joe's brand, all the cubed squash & enough water to just cover the squash.

STEP 4■Simmer covered for approximately 1 hour until squash is tender.

STEP 5■Scoop out soup & puree.
.
I used my nutri-bullet. I filled the cup up a little over halfway & added an inch of plain almond milk. Pour into a new pot. Continue until all the soup is pureed. If you like it creamier add more milk during this process and water if you like it thinner. 
Stir well & serve immediately. ENJOY!

STEP 2■In a large stock pot •Add 1 large sweet onion chopped •6 garlic cloves chopped •1/4 tsp hot pepper flakes •1/2 tsp greek oregano •1/2 tsp black pepper •1/4 tsp nutmeg Open quart of organic vegetable broth & pour some in pot 2 saute all of the above for approximately 10 minutes . STEP 3■Add the remaining vegetable stock. I used Trader Joe's brand, all the cubed squash & enough water to just cover the squash. . STEP 4■Simmer covered for approximately 1 hour until squash is tender. . STEP 5■Scoop out soup & puree. . I used my nutri-bullet. I filled the cup up a little over halfway & added an inch of plain almond milk. Pour into a new pot. Continue until all the soup is pureed. If you like it creamier add more milk during this process and water if you like it thinner. Stir well & serve immediately.
