Vegan Coconut Panna Cotta by @laurafruitfairy 💗
For 4-5 portions:⠀
1 litre coconut milk ⠀
5 Tbs coconut sugar⠀
1/2 tsp vanilla bean powder⠀
How to make:⠀
Bring everything to boil. Simmer for 3 minutes, stirring consistently. Pour into large muffin tins and let the hot panna cotta cool down before transferring it to the fridge. Refrigerate for at least 1 hour before serving.⠀
Blend 500g fresh or defrosted strawberries with 200g water and 3 Tbs coconut sugar. ⠀
Maple Glazed Roasted Delicata Squash by @plantlovinturk 💛
2 small delicata squash, seeds removed and cut into ½-inch rounds
2 tablespoons pure maple syrup
2 tablespoons light olive oil
1/4 tsp pink Himalayan salt
Maple White Balsamic Dressing
1/2 cup extra virgin olive oil
1/4 cup white balsamic vinegar
2-3 tablespoons pure maple syrup
1/2 teaspoon pink Himalayan salt
1/4 teaspoon freshly-cracked black pepper
1/4 teaspoon Italian seasoning (store-bought or homemade) *see homemade recipe below 👇🏼👇🏼
1 1/2 teaspoons dried oregano
1 teaspoon dried marjoram
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage
Mix all seasonings together in a bowl until we’ll combined. Use immediately or store in a sealed container.
Preheat oven to 400 degrees. Place the squash in a large bowl and drizzle it with the olive oil, maple syrup and sprinkle with salt and pepper.
Lay out the rings on a baking sheet lined with parchment paper and baste with the glaze that is left in the bowl.
Roast for 12-15 minutes, then flip the squash rings over and roast for another 6 minutes. Don’t forget to baste with glaze once again after you’ve flipped them.
Remove from oven and let cool for a few minutes
Serve over greens sprinkled with pomegranates, pepitas and desired greens. Drizzle with Maple White Balsamic Dressing. Enjoy! #letscookvegan

Work on one thing at a time. 💚This morning started my day off with turmeric oats. 1/2 cup oats, 1/2 mashed banana tsp cinnamon, 1 tsp maca, 1 tbsp flax meal, 1 tsp maple syrup, 1/2 tsp cinnamon, pinch ginger, pinch turmeric, 1 1/4 cup almond milk. Stir over medium heat till right thickness. Serve and enjoy with some tea. 😋

I met a lot of great people in Toronto. A group of them are not vegan at all and used to say "oh my god, poor you" to my boyfriend when he said I was vegan. 🙄
Then I met them and showed how easy it was for me to be vegan just by spending time with them. A lot of them told me that I was "a good vegan" 😂 Because I wasn't judging them.
Then they became curious. So I invited a couple over for dinner and tried to serve them good vegan food! 😆 Homemade burger patty with @daiyafoods cheddar (this one's good!), @maddielymburner sour cream, tomato, salad and Dijon mustard. Served with homemade french fries. 🍟
For dessert I made nicecream (blended frozen bananas) and a chocolate chip banana bread 🍌
They loved it 😄 I'm so grateful to meet such great people who are open minded and who I get to help try vegan food and incorporate more plant-based foods into their diet 😊❤ .
J'ai rencontré plein belles personnes à Toronto. Dont un groupe pas vegan du tout et disait à mon copain "oh la la mon pauvre" quand il leur disait que j'étais vegan. 🙄
Puis je les ai rencontrés et leur ai montré comme il était facile d'être vegan juste en passant du temps avec eux. Plusieurs d'entre eux m'ont dit que j'étais "une bonne vegan" 😂 Parce que je ne les jugeais pas.
Ensuite ils sont devenus curieux. Alors j'ai invité un couple parmi eux à dîner et j'ai essayé de leur faire un bon dîner vegan ! 😆 "Galette" pour burger maison avec cheddar @daiyafoods (celui ci est bon), crème "sûre" (😂) de @maddielymburner, tomate, salade moutarde de Dijon. Servi avec des frites maison. 🍟
Pour le dessert j'ai fait de la glace maison à base de bananes congelées mixées ainsi qu'un cake chocolat banane. 🍌 Ils ont aimé 😄 Je suis super reconnaissante de rencontrer des personnes ouvertes d'esprit comme ça et à qui je peux faire essayer des plats végétaliens et aider à incorporer plus de plats vegan dans leur alimentation 😊❤
Just reminiscing about Bali and how beautifully kind the people were. It was so nice to meet people who are so genuinely happy to be alive that they radiate light when they smile. I am grateful that they (unintentionally) transferred some of that light into my own heart... Whenever I travel I always get an overwhelming feeling of gratitude for life and the chance I have been granted to live on this beautiful planet. I need to make sure I get the most out of this experience before I get to 80 years old and regret spending my life on my phone. So here's a challenge for today, LOOK UP, appreciate this organic spaceship we call home and your fellow inhabitants, and maybe then you'll fall asleep with a smile on your face ✨🌱😆
Every dish has a story, and this one started when we met @eugenekan - shamelessly one of our favorite photographers - this past month at a @thatfoodcray event in Los Angeles. A couple days later, he caught up with us online and let us know his favorite childhood dish: Campbell’s Chunky Soup with White Rice. 🍚 Therein lies the creation to this soup, swimming with roasted portobello mushrooms in a thick, red wine, caramelized onion sauce. My kids are on winter break the next couple weeks which means no schedule and lots of flexible time in the kitchen for cooking. For dinner tonight we're having nachos!! These taste so incredible you'll think you're cheating. It starts with a bed of oil-free corn tortilla chips made homemade (slice oil-free corn tortillas into triangles, spread on a parchment lined baking sheet and bake at 350°F for 17 minutes). Then I topped the chips with canned oil-free black refried beans (cut corners where you can) and a layer of @brandnewvegan's cauliflower/mushroom/walnut taco meat. (I've made this before and shared it with y'all. It is so convincing as the real thing both in taste and texture it's scary. Just google "Brand New Vegan Cauliflower Tacos." I use about 1/3-1/2 of the amount of chili powder he recommends to suit my spice preference. I also double the recipe.) Next I drizzled some homemade InstantPot smokey vegan cheese and topped with guacamole and black olives! ..
Ever wondered how to prepare tempeh? My favorite way to make tempeh is to steam it for 15 minutes and then marinate it for 30 minutes. I find that steaming tempeh helps remove some of the bitter flavor and helps it absorb the marinade better! I’ve always had a regular yoga practice, although some weeks are better than others. Recovery and I have never really seen eye to eye either, but after the Seattle Marathon my inner voice has been telling me to reset, keep strong, but chill for a second. I’m always “working” because I love what I do. Every damn day.
It’s just a fresh start .... a new day that kicks off a new week and that means I can grow. From the feedback given to me from my team, from my clients and customers at my gym. Business partners. Relationships of all sorts.
I never claimed to have it all together.
Only claimed to have the drive to want to.
I f*ck up A LOT. But that’s ok.
I can take the feedback
I can take the criticism
My focus is on improving
I don’t dwell on the past
I want a certain life and I surround myself with bad asses who want the same things.
The people on my team 🤷🏽♂️👱🏻♀️👴🏻👩🏾⚕️🧔🏻push me. If they don’t, we wouldn’t be a team. So I work to continue growing. And it’s a stressful, fun, irritating, amazing, nerve racking process that at the end of the week I need a damn break‼️

I didn’t post these right away because I was initially embarrassed of the look on my face in these pics, though at the same time I thought it was pretty funny! 🙈😅 I wanted to share these photos today because at this point, even though my facial expressions are LOL-worthy, I still think I look strong & fierce af! Like yaaasss I did that! 🙃💁🏽♀️ Anyway, I have beat myself up in the past far too many times for my flaws & mistakes when I shouldn’t have. I still have the tendency to, but everyday I am learning to be more kind to myself & love myself better. I am healing. I am growing. I embrace the journey. 🌻💖

The Sahakian cigar lounge in the Bvlgari hotel in Knightsbridge. This lounge was #1 in the world for 2015 and it’s easy to see why. The establishment is impeccable. Beautiful wood and plush leather chairs and seats all around. The cigar selection is amazing as well. All your standard production habanos as well as limited and LCDH editions and an incredible selection of aged and vintage cigars from the personal collection of Edward Sahakian himself. It’s a bit pricey but you are paying for the experience as well. If you are a baller you can even have a vintage Cuban davidoff for 1000 gbp!!!! Everything the hotel serves in the bar and restaurant is also available in the lounge. You can drop some serious cash here on a meal and a good smoke but what else would you expect in London? With Harrods around the corner and the mcclaren showroom across the street this is one of the poshest areas in the world. Attila runs the lounge most nights and is an expert cigar sommelier. 2nd place runner up habanos sommelier if I am not mistaken. Heaven for the cigar aficionado in my opinion. Attila provides the best service and talking cigars with him is an experience in and of itself. It is quiet most of the time but does get busy on some nights. Because of the area and exclusivity you will always get people with more money than sense. 80 quid cigars half smoked and chewed up which is sacrilegious to a smoker but Attila quickly and politely educates customers and spots the true aficionado and makes sure the experience is what it should be. This is my happy place in London. A quiet and relaxing oasis in this awesome crazy city that I love.
