My favorite things about cold weather are warm food and full bellies. To make things a bit healthier/less processed, I make everything from scratch! Let’s be real, the dough is the hardest part!! But the recipe from @simplyrecipes .com was easy and relatively quick! Nothing fancy, just the basics and buttery perfection 👇🏽👇🏽👇🏽👇🏽👇🏽👇🏽👇🏽👇🏽👇🏽
2 1/2 cups all-purpose flour, plus extra for rolling
1 cup (2 sticks or 8 ounces) unsalted butter, very-cold, cut into 1/2 inch cubes*
1 teaspoon salt
1 teaspoon sugar
6 to 8 Tbsp ice water *The first thing I do when I'm even thinking about making a butter-based pie crust is to cut up the butter into cubes and put them in the freezer. They should chill at least 15 minutes in the freezer.
A lovely coating for a pie can be achieved with a simple egg wash.
1 Tbsp heavy cream, buttermilk, or milk
1 large egg yolk
Beat egg yolk with cream and brush on the surface of the pie with a pastry brush.

Classic comfort with a twist. Deconstructed (aka crockpot) Chicken Pot Pie w/Viognier. Usually a creamy, lightly oaked Chardonnay is what I’d be sippin’ but tonight I went for some contrast with the very Rhone Valley style Viognier from @bench1775 (a spectacular winery nestled in the heart of the Naramata Bench). Clean, zest of citrus with an intoxicating aroma of apricots & full mouth feel, it played off the sweetness of the veg & decadent doughiness of the biscuits #likeaboss . I am a total foodie at heart. I cook from home. I use Do You Bake and Crave It foods every day all the time...
And I don't stick to four food groups. .
I have overcome the fear of gaining weight.... I just don't anymore..
I have learned so much about how to enjoy what I love and progress in my fitness and while it could probably happen faster if I cut things out...I love the balance I have achieved. .
I always shred in January and this year I didn't gain a pound and I am learning how to listen more to my body.
When your food is real...not take out..not restaurant...when you cook and can control what you put in your food...it not only tastes better but is so much better for you. .

🚨!!Quick Recipe Alert!!🚨 Mini Chicken Pot Pies
Just in time for the holidays these mini pot pies will surely be a hit with guests! Set them out for for guests to munch on while they wait for the main meal to finish, or serve them at a get together along with other small bites! Have leftovers? These pies can be refrigerated, heated in the microwave, and still taste delicious! For a vegetarian friendly version, substitute cream of chicken for cream of mushroom, and rotisserie chicken for mushrooms or potato!
Ingredients (makes 6 mini pies)
*1 can Cream of chicken
*1/2 Sweet onion
*Pie crust (I used Pillsbury pre-made pie crust, but feel free to use homemade if youre not in a rush)
*Shredded rotosserie chicken *Fresh thyme
*Salt and pepper to taste
Saute mixed veggies and chopped sweet onion in olive oil. Add shredded rotisserie chicken, cream of chicken, about 8oz of water, and a tsp of chopped and combined fresh thyme. Mix ingredients, add salt and pepper to taste. Turn off heat. Fill bottom of jumbo muffin pan cups with pie crust (as shown). Add cooled pie mixture into cups top with additional crust, and fold edges inward to seal. Bake pies at 375 until golden brown (about 15-20 min). Let pies completely cool, and carefully remove from muffin pan. I finished mine with a mixture of fresh thyme and butter, and a small sprig rosemary! Enjoy! Happy Eating!
