Kıvamı görmeniz için tabağa koyarken de çektim. Ayşe rahat yiyebilsin diye biraz kıvamlı yapıyorum ben. Sulandırmak isterseniz suyunu daha çok koyabilir ya da kremayla süt ekleyebilirsiniz. 2 tablespoons extra-virgin olive oil
1 yellow onion, finely diced
2 crushed garlic cloves
2 bay leaves
1 large kabocha squash, un-peeled, halved, and cut into 3⁄4-inch cubes (you can also use peeled and cubed butternut squash)
8 cups low-sodium vegetable broth
3/4 cup uncooked quinoa
1 tablespoon soy sauce (or try Bragg’s Liquid Aminos)

I admit I have an Onion Ring addiction. But have you tried the Thai Pumpkin Soup from the @theflagstaffhotel ? It's also my fave, and I always hope it's one of the soups they're serving when we dine there.
Pumpkin and Thyme Soup. My son loves soups, he would sometimes have it on its own but he usually takes it with a separate bowl of veggie rice too! No hunger necessary for the vegetarians ;). So we cook many many soup dishes at home. This recipe is a bit special because when we lived in Singapore, we had a cleaning lady who came once a week to make our home look wonderful and she also came over to help us cook a week's supply of food. On one occasion she cooked us pumpkin soup and she told us the secret ingredient... THYME!! And it truly made the soup much more magical.
I have been sharing this secret since :). I hope you enjoy this as much as we do at home.
1 tablespoon of olive oil
2 cloves of garlic, minced
1 small onion, chopped
1 kg of pumpkin, cubed
1-2 vegetable broth cubes
1 tsp of home dried thyme or 3 sprigs of fresh thyme
Sauté the garlic and onion in the oil until fragrant in a soup pot, then add the pumpkin and stir fry for a minute. Add enough water to cover the pumpkin, boil then reduce the heat to a simmer. Add the vegetable cubes in (flavor strength to taste), I would suggest putting in one first then adding another later on if necessary.
Once the pumpkin is soft, add in the thyme. Turn off the heat and blend the soup using a hand blender. Add a splash of milk if you like and season with salt and pepper to taste. You can also adjust the thickness by adding more or less water.
Making dried thyme at home: I find that using the home dried thyme makes the dish much more fragrant. And it is very simple to dry your own thyme at home. I do it in the refrigerator. So, just take your fresh thyme, put it in a plastic bag and leave it in the refrigerator until it dries. Then remove the leaves from the stalks and keep the leaves in an airtight container in the refrigerator, easy to reach when you need in soups and sauces. #vegetarian#pumpkinsoup#soup
Butternut Squash-Pumpkin-Carrot soup, topped with roasted butternut squash and pumpkin seeds. It's sooooooo gooooodddd!
3 small/medium butternut squash
1 small pumpkin (I think it was a sugar pumpkin... you could always use canned pumpkin though)
5-6 large carrots
5-6 cloves of garlic (or more... cause, duh)
3 branches of celery
Unsweetened coconut milk
Peel, de-seed, and chop butternut squash and pumpkin into cubes. Stick in a glass oven dish. Put a few small dollops of coconut oil on top. Sprinkle with salt, black pepper, and nutmeg. (I didn't do it this time, but curry on these is also 👌🏽) Put in oven on 450 for 30-40 mins. (Smaller the cubes the faster it goes!) Meanwhile, chop up onion, carrot, celery and mince garlic. Place those in a large pot with enough water to just barely cover the veggies. Cook on medium/high with a lid, until veggies are soft.
Once squash is soft, take it out of the oven and dump into the pot with veggies. Stir.
Get out your blender or immersion blender and blend until smooth! Additional salt and pepper as needed.
