RECIPE ALERT! // if you're looking for a no sugar, gluten-free and vegan friendly muffin, i've got you cover with these banana bread muffins. while on my no refined sugar challenge i experimented with a few recipes. i think i've finally got it down. these are pretty legit considering the simple ingredients in them. give it a try if you're up for some weekend baking this weekend. the weather outside is just right for a little fall baking. and you know, your house's going to smell so good. 😄 .
BANANA BREAD MUFFINS .
- 30 pitted dates
- 2/3 cup non-dairy milk (i used almond milk)
- 3 browned bananas
- 2-1/4 cup oat flour (you can use 2c rolled oats and blend it in a blender)
- 1 tbsp baking soda
- sprinkle of salt
- 1/3 cup oil .
preheat oven to 350 F. if you don't have oat flour, use 2 cups of rolled oats and blend it in a blender until it resembles flour. pour it into a bowl and set aside. skip this step if you already have oat flour. in the same blender, add in the pitted dates and non-dairy milk. blend until the dates and milk mixture resemble a paste. in a good size bowl, mash the browned bananas then pour in the date mixture and mix until combined. add in the oat flour, baking soda, salt and oil. mix the ingredients until fully incorporated. using a 12-muffin baking sheet, either line them with cupcake liners or grease each individual muffin slots with oil, pour the batter evenly among them. bake for 20-25 mins or until a toothpick comes out clean. let cool and enjoy! makes 12 muffins. // optional: you can probably add mix-ins like nuts or chocolate chips if you like. i opted for a simple version instead.
Still have a long way to go to being able to do an unassisted pull-up BUT I am slowly getting closer. Today I worked up to a new 1 rep max on the assisted chin-up machine. Set the weight at 100 pounds and completed 1 full rep. Failed trying for a second one. A month ago I could only move maybe an inch at that weight so definite progress!!!

Day 5/7 is complete! 💪🏼 This WO was called Core Function but also worked my legs, booty, shoulders & all of my core 🙌🏼 Loving this program, it’s kind of back to basics & I’m enjoying the slower, simpler yet effective style!
Jeff & I decided on the next program we are starting on Monday!!! So so so excited for it! He’s recovered from his injury & ready to crush it with me again! Perks of having all these programs at our fingertips!

Holy moly...I am running late today.
I just finished working out and was SOOO not wanting to do it. I'm glad I did of course cuz I feel pretty damn good now! 💪👍🎆🎉 That is what exercise does...It works on your physical AND mental health....it's like taking a happy pill. 😉
Research shows that if you are stressed, anxious, unhappy etc, regular exercise helps you!
I am here today saying that it's true and it works. You don't have to believe me, so...try it!
