Peep one of my favorite foods as a side for lunch today. Sweet potatoes. One of the easiest and best ways to cook them is just baked in the microwave, chop, and then crisp em' up on the stove with some ghee (@fourthandheart vanilla bean). 🔥

• zero waste sweet potato flatbreads •
- one large sweet potato
- 2 cups spelt flour
- pinch of salt -> boil the sweet potato until well cooked. Mash them and add the flour + salt. Adjust by adding more or less flour depending on the consistency.
Form 4 small balls and roll them out one by one. Hit a skillet and cook one flatbread each side for 3 minutes. Voilà!
It is well used as a wrap, or as a side dish with curry. 🌶🍠
For the next few weeks we are avoiding grains on our new program.... I ❤️ bread so this will be challenging. I didn't quite prepare as well as I wanted to yesterday so I asked hubby for some help while I was working at the clinic this morning.

Safe so say the workout was as hard as people said it was 🤣 finished in 6:53 and had to scale the pull ups to red banded (my forearms were DESTROYED). My goal was to finish in 6 minutes, which I didn't do; but I'm happy I have a time to beat for next time! •
