Follow Friday! I've been saving this #keto bagel recipe for months now, and it comes via @kimchi.and.collards, the IG page of Nia (and occasionally Mike) Chang. Nia needs no introduction, because 1) she's the most hilarious keto poster on IG, 2) she's got literally 10x my followers, and 3) the half of you I didn't find through @keto_steve, I found through her.
Anyhow! This recipe is from Nia, which is pretty funny because for every post she makes about cooking, there's 10 more about her organizing huge NYC keto meetings, finding random Asian takeout, or something shitty on the MTA, with commentary throughout about razor tight black jeans and/or all caps vagina jokes.
What was I talking about? RIGHT, BAGELS, DAMN. This is fathead dough that's being purposed for bagel winningness, and Nia is 100% right, it should garner all the footrubs.
3/4 cup almond flour
2 tbsp cream cheese
~2 cup loosely packed shredded mozzarella
1 tsp xanthan gum
TJ's Everything But The Bagel shaker
- heat oven to 400 F (375 in my Breville)
- mix all in microwaveable bowl
- nuke 1 min
- stir stir stir
- nuke 30 seconds
- stir stir stir, quickly now
- crack egg into this mess, mix
- break dough into about 4 equal lumps
- work with hands into rings (I flatten into discs, poke a hole, and reshape. Swipe ⬅️to see), or use a bagel mold (don't own)
- there will still be some egg in the bowl, use it as wash
- shake dat spice yo
- bake in mold or on parchment paper, should take 12-15 min
These brown up nicely at any size, so make em bigger or smaller. Fathead tastes even less like cheese in this thicker configuration, and the chewiness is welcome in bagels...just a great application.
I can't tell if these are actually really amazing, or if I'm biased because I haven't eaten bread in months, but either way I snarfed a whole one while it was still piping hot. (tip: don't)
Limited Edition Starbucks Pumpkin Spice Latte! They make this in a big version too but I opted for the small one since I’ve been trying to avoid coffee, but wanted to give this a shot. The pumpkin is strong but not overpowering, and you can still taste the coffee which is nice! This tastes pretty much exactly like Starbucks Pumpkin Iced Coffee, but I actually enjoy their PSL a little better than that. Not my favorite, but still good! Rate: 7.5/10. Found @: A local gas station but have seen at BP and other gas stations 🎃☕️
Hoje foi dia de provar a pizza que o @rodrigomocoto criou para a @napolicentralepizza! A combinação é bem inusitada e ficou deliciosa, vai carne seca na nata, abóbora cabotiá, pesto de coentro com beldroega e pimenta biquinho. Mas corre que ela só fica no cardápio até sábado, depois entra o sabor criado pelo chef Checho Gonzales!
