It is always sad to say bye to coffee friends, especially after the great events like @seoulcafeshow but definitely one of the best parts of it is to come back home with beautiful coffees. Thanks to @cosimissimo and @charlottemalaval for bringing me this delicious coffee. Unfortunately I did not have chance to cup this coffee as Espresso from @masciullofra of @dittaartigianale, at #worldbaristachampionship2017 . I brewed El Diamanté with 30gr/480ml in @the_chemex and used 80ppm water. Total brew time was 03:20. The aroma was full of cinnamon notes, surprising coffee with apple crumble flavor notes and a very sweet cup. This 'Diamond' from Costa Rica made my day! #eldiamante#costaricancoffee#specialtycoffee#worldcoffeeevents2017#worldcoffeeevents#cafeshow2017#tobysestate#tobysestatecoffee

On my way back from this amazing adventure. 16th place in the World Barista Championships! A trip that started way before Seoul with @pippigrillo & @ben_morrow working our way through first sugars and then soil. From Eindhoven to Rotterdam to Seoul. Sometimes enlighting and amazing, sometimes diffucult and frustrating, but always with the eye on the goal. A final push where it really all came together with the help of @rondewit67 @sca_netherlands @ms_pangpang & @_noon.moon. Thank you @alpro for making it all possible as head sponsor! You can’t do all of this without backup. @brita.nederland for the help with the shipment and @lamarzoccokorea & @lamarzocco.nl for the training space! Thanks @blackandbloomgroningen for a sponsor celebration dinner and everyone else in The Netherlands for the support! Ofcourse @wcoffeeevents for organising another great event as always. Amazing coffees from @panamavarietals Finca Hartmann & @willemjboot Sofia. And a sneaky shoutout that we’re really proud that our starting roastery @manhattancoffeeroasters made it to the world and almost in the semi-finals! #wbc2017#worldcoffeeevents#worldbaristachampionships#TeamTheNetherlands#Dutchbaristachampion#MerijnGijsbers#manhattancoffeeroasters#RoadtoSeoul#roasterslife

The 2017 World Barista Championship Final is today. I get to see this incredible week off judging with this fine panel of judges. It has been an inspiring week filled with passion, innovation and progression. Thanks to the competitors for all the inspiring performances, thank you to @wcoffeeevents and all the dedicated judges who help make this event happen.
Never lose sight of this singular truth: we serve people, not coffee.

I’m deeply disturbed by the decision of the @specialtycoffeeassociation to alienate our LGBTQ+ community with their recently-announced “Deferred Candidacy” Policy. This decision is creating a more divided, less inclusive and less accessible industry. It creates no accountability for the SCA to host events in countries that WON’T persecute Queer/GNC/Trans folx. It‘s asking Queer/GNC/Trans competitors to publicly out themselves. It assumes that these competitors will have access to the same facilities, finances and support systems ONE YEAR after they compete and win. It is impractical. It is abhorrent. It is painfully tone-deaf.
I cannot and will not stand behind this decision, and I encourage any coffee professional reading this to voice their dissent to the SCA in the form of petitions, emails, social media and/or boycotts. It’s been encouraging to see major coffee institutions, communities and influencers speak out over the last 24 hours against this new policy. Let’s continue to fight for the industry that we want. Let’s build this together.
