I took the plunge and decided to try @hellofreshca. It’s so hard to plan diverse healthy meals so I thought this could be helpful. The customer service is amazing and the food is scrumptious.
Delivered in an insulated box so everything stays fresh. Every meal is portioned and easy to prepare with step by step instructions. This was last nights meal and it was delicious. Killian especially loved the zucchini.

EGG FREE CHALLAH HACK! Let’s just say you have a random vegan coming for lunch (love u @hana.mcgowan!), or are watching your cholesterol, or simply want a lighter fluffier dough like I did when I made this salted rosemary challah. You don’t need to break out your recipe books and start again. Nor do you need any of those egg replacementy ingredients. Just take your regular Mandylicious challah recipe (DM me if you don’t have it yet), take out the egg yolks and sub in an extra 2 Tablespoons of water and 2 Tablespoons of oil. That’s it. Works out awesomely delightful every time. 😇

it’s a sunny morning here in bloomington today and it’s got me all in my feels. I’m such a morning person and being able to eat a good breakfast (see above), drink my coffee and watch a little TV before class is exactly what I need in a morning.

These Heart Shaped Berry Hand Pies are the perfect heart shaped desserts
HEART SHAPED STRAWBERRY HAND PIES
Serves: 8-12 hand pies
Homemade jam (or use store bought jam):
raspberries (frozen or fresh)
strawberries (frozen or fresh)
Preheat oven to 365.
Make jam: add raspberries, strawberries, and sugar to a medium saucepan and bring to a boil. Smash berries with a muddler or potato masher to break down as you heat.
Boil over medium-high heat, stirring frequently, until thick and jam-like consistency (about 10-15 minutes).
Roll out pie crusts on a floured surface.
Cut out an equal number of hearts with a heart cookie cutter. Separate half for the bottom and half for tops. Roll the tops out slightly larger with a rolling pin (this helps them stretch around the filling without rupturing.
Place bottoms on a silicone or parchment lined cookie sheet.
Whisk egg together and brush edges of dough with egg wash.
Add a scant tablespoon of cream cheese and a tablespoon of jam to each pie. Top with crust and crimp edges with a fork.
Cut vents in each pie and brush with remaining egg wash.
Bake 15-20 minutes until golden brown.
While they bake whisk together powdered sugar and milk for glaze.
Dip the pies into the glaze while still warm and place on cooling rack. Allow to fully cool and harden (can be sped by placing in the refrigerator).
The health kick continues. Don’t worry, I’ll probably last another week max. Taking bets on whether I can keep this up until April... 🤑 Strawberry-raspberry chia seed pudding. I made the strawberry with almond milk and the raspberry with coconut milk. Consensus: strawberry tastes better, raspberry has a better consistency.
