Attended a Wagashi (traditional Japanese confectionery) class presided by an 80-year old master who has been handcrafting the delicate sweets in the 150 year old shop for 65 years. After endeavouring to make two basic wagashis, my appreciation for this dying tradition of artisanal wagashi-making has gone up by several notches! Wagashi is made primarily from Mochi rice dough and Azuki beans with natural food coloring from seasonal flowers. Usually eaten at tea ceremonies,  the Wagashi is beautiful, intricate in details and made in accordance to the Japanese’s reverence for the seasons and nature
