Another thing I got up to this week was a class on modern plated desserts with @nicolasbotomisy at @valrhonausa @ecolevalrhona in Brooklyn.

What would a trip to NYC be with out popping into @bouchon_bakery?
We grabbed one of their bacon cheddar and chive scones and this was probably one of my favourite savoury items in the city. The salt from the bacon packed a flavourful crunch and cheese gave the scone a moist and dense texture while still maintaining the proper flakiness. I wish I had bought more but I didn't know how much more waistline I could sacrifice... 😝
The TKO was like a very refined Oreo cookie, soft chewy and crumbly with a not too sweet filling. Very balanced, I will definitely be playing around with the recipe from the @bouchon_bakery book!
